Spinach and Ricotta Tortellini

Delicious one pot Spinach and Ricotta Tortellini pillows, cooked in a garlic infused, rich, tomato sauce, all in less than 15 minutes.

  1. Heat oil on medium heat in a large, deep skillet. Add garlic, cook 30 seconds until fragrant.
  2. Add passata (or crushed tomatoes if using) and the same amount of water.
  3. Add salt, pepper and sugar, bring to the boil.
  4. Add tortellini, cook for 2 minutes.
  5. Turn off heat, stir through basil if using.
  6. Serve topped with parmesan cheese.
