Kale & Quinoa Salad

Quinoa was once reserved for special cafe visits, but not anymore. It is such an easy grain to cook with at home. This salad teams crunchy kale, quinoa, almonds and red onion with salty, oozy haloumi cheese.
Kale & Quinoa Salad
Ingredients

Dressing ingredients

  • 4 tbsp olive oil
  • 2 tbsp lemon juice
  • 1 tsp dijon mustard
  • 1/2 tsp salt
  • 1/2 tsp black pepper

Salad ingredients

  • 1 cup cooked quinoa (see cooking instructions below)
  • 2 cups shredded kale leaves
  • 1/2 red onion sliced
  • 1/2 cup almonds roughly chopped
  • 1 tbsp olive oil
  • 180g haloumi cheese sliced into 1cm pieces
  • Lemon wedges to serve
Method
  1. Combine salad dressing ingredients.
  2. In a large bowl, add quinoa, kale, red onion and almonds. Toss through dressing.
  3. Heat large skillet on high heat. Add olive oil and cook the haloumi, large flat side facing down for 1 minute, turning once halfway.
  4. Serve salad topped with haloumi and lemon wedges.

How to cook perfect quinoa:

Microwave: 

  1. Rinse 1 cup of quinoa in water and drain.
  2. Add 1 cup of quinoa and 2 cups of water to a microwave safe dish. Cover.
  3. Cook on high 5 minutes. Stir. Cook further 2 minutes.
  4. Allow to stand until cool. Leave the lid on. The quinoa will slowly absorb the remaining water.
  5. The quinoa is cooked when the grain turns translucent and the germ of kernel spirals out.

Stove top:

  1. Rinse 1 cup of quinoa in water and drain.
  2. Add 1 cup of quinoa and 2 cups of water to a saucepan.
  3. Bring to the boil, stir once, reduce to simmer.
  4. Cover and cook for 15 minutes.
  5. Remove from heat and allow to sit, covered, for a further 10 minutes.
  6. Remove the lid, fluff the quinoa using a fork and serve.
  7. The quinoa is cooked when the grain turns translucent and the germ of kernel spirals out.
