Homemade Meatballs

These super soft meatballs can be plonked straight into your sauce raw - No need to sear first! The result is a comforting, delicious dish.

Ingredients

Meatballs

  • 500g beef mince
  • 250g pork mince
  • 1 large grated onion (this is the key for super flavoursome meatballs without chunks of onion the kids pick out!)
  • 1 cup fresh breadcrumbs (I like blitzing a leftover roll otherwise any breadcrumbs will work)
  • 1 egg
  • 1 tsp salt
  • 1/2 tsp pepper

Sauce 

  • 1 jar passata (or two cans of whole tomatoes blitzed up – even better!)
  • 4 garlic cloves finely chopped
  • 2 tbsp olive oil
  • 1 tsp white sugar
  • 1 tsp salt
  • 1/2 tsp pepper
  • 500g of pasta of your choice (I used reginette here but I usually opt for Woolworths brand pasta)
  • Parmesan to sprinkle on top (optional)
Method
  1. Combine meatball ingredients in a bowl using your hands. Roll into just smaller than golf ball size.
  2. Move onto the sauce. In a large skillet on low heat, saute your finely chopped garlic in olive oil until it starts to soften.
  3. Add the passata, salt and sugar, increase heat to high. Once the sauce is bubbling, drop in your meatballs. Spoon over some sauce on top of the meatballs. Reduce heat to lowest setting and cook for 40mins, lid off.
  4. Cook pasta as per packet instructions less 1-2 minutes.
  5. Remove meatballs from the sauce, add 1/2 cup of pasta water into the skillet and add the pasta. Stir the sauce and pasta on medium heat for 1 minute.
  6. Plate up. I like starting with the pasta, topping with meatballs and parmesan cheese (this ensures your beautifully soft meatballs don’t break up).
