Homemade Fish and Chips

I love a classic, crunchy fish and chips complete with homemade tartare sauce. What I love about this version is that I can bake the chips in the oven and worry about the fish in the last 15 minutes of cooking. I batch crumb fish so that I can reserve half for the freezer. I love knowing exactly what I'm eating - There are a lot of extra ingredients in frozen fish portions you buy at the supermarket. This is simple cooking at it's best. The recipe includes how to shallow fry or bake crumbed fish (as well as instructions on baking fish from frozen).

Ingredients

Fish

  • 600g flathead fillets or any firm, white fish (see note 1)
  • 2 eggs whisked
  • 1/2 cup flour
  • 2 cups panko bread crumbs
  • Canola oil, or any high smoke point oil if frying (see note 2) otherwise 2 tbsp olive oil if baking
  • 1/2 tsp salt
  • Lemon wedges to serve (optional)

Chips

  • 1kg potatoes, any variety (see note 3)
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1 tsp sweet paprika
  • 1/2 tsp pepper

Tartare Sauce 

  • 1.5 cups whole egg mayonnaise
  • 1 tbsp gherkins finely diced
  • 1 tbsp capers finely diced
  • 1 tbsp red onion finely diced
  • 1 tbsp fresh dill finely chopped (or fresh parsley if preferred)
  • 1 tbsp freshly squeezed lemon juice
  • 1/2 tsp each pepper and salt

(Makes approximately 2 cups)

 

Method

How to prepare fish

  1. Cut fish into strips.
  2. Dust with flour.
  3. Dip into egg mixture.
  4. Dip into breadcrumbs.
  5. The fish is now ready to be cooked or frozen (see recipe additional information below if freezing).

Tartare sauce

  1. Combine ingredients and serve.

Chips 

  1. Preheat oven to 220c convection or 200c fan forced.
  2. Cut the potatoes into wedges – You will get approximately 8 wedges from a large potato or 6 wedges from a small -medium sized potato. I don’t peel the skin, but either way works.
  3. Place the potatoes in a large baking dish, add remaining ingredients and use your hands to coat evenly.
  4. Arrange potatoes so that the cut side lays flat on the tray. This is important to ensure crispy potatoes.
  5. Place in the oven and cook 25 minutes.
  6. Turn potatoes so that the other cut side now lays flat on the tray. Cook further 20 minutes. (It’s in this final 20 minutes that I cook the fish).
  7. Serve immediately.

How to shallow fry fish

  1. Heat oil in large skillet on high heat.
  2. Once oil is hot, add fish and cook 6-8 minutes until crispy and golden.
  3. Drain on paper towel.
  4. Sprinkle with salt and serve with lemon wedges and tartare sauce.

How to oven bake fish

  1. Preheat oven to 220c convection or 200c fan forced.
  2. Drizzle crumbed fish with olive oil, cook 12-14 minutes.
  3. If you want to deepen the colour of the crumb (see note 4), grill for the final 2 mins of the cook.
  4. Sprinkle with salt and serve with lemon wedges and tartare sauce.

How to oven bake fish from frozen

  1. Preheat oven to 200c convection or 180c fan forced.
  2. Drizzle crumbed fish with olive oil, cook 17-19 minutes.
  3. If you want to deepen the colour of the crumb, grill for the final 2 mins of the cook.
  4. Sprinkle with salt and serve with lemon wedges and tartare sauce.

Note 1 – Fresh, white, firm fish fillets from the fish shop are best. I have used Flathead for this recipe but I also regularly use Ling. Cod, Tilapia, Hokki or Perch all work equally well.

Note 2 – You will need between 600ml-1000ml of oil. Enough to cover the base of large skillet approximately 1cm deep.

Note 3 – The potatoes can be any variety. I buy whatever is on special. I don’t peel mine, but either way works.

Note 4 – Baking crumbed fish fillets does not result in perfectly golden, even crumbing on the outside. It will taste amazing but the colour comes from oil. You can toast your breadcrumbs first in a dry pan to deepen the colour of your crumb before crumbing your fish if you would prefer a more toasted look.

Can crumbed fish fillets be frozen? Yes! Store your crumbed fish fillets in an airtight container with baking paper in between the layers to stop them sticking. Freeze up to 3 months.

Can crumbed fish be cooked from frozen? Yes! See the recipe instructions on how to cook crumbed fish from frozen. If you would prefer to shallow fry the fish from frozen, I recommend thawing it first or cooking it on a low-medium heat.

Can I prepare potatoes ahead of time? Yes! Simply peel and cut the potatoes and place them in a container or bowl. Cover completely with water and refrigerate for up to 24 hours. The water will stop the potatoes browning. Do not add salt (as the potatoes will go brown). Strain and dry the potatoes with paper towel before use. Cook as per recipe.
